Ingredients:
For the Crepes:
- 1 large egg
- 1 tablespoon granulated sugar
- ½ teaspoon fine sea salt
- 1¾ cups all-purpose flour
- 1⅔ cups milk
- ¼ teaspoon ground coffee (optional, enhances chocolate flavor)
- 2½ teaspoons unsweetened cocoa powder
- Sunflower oil, for cooking
- 8 tablespoons Nutella
For the Warm Fudge Sauce:
- 2 tablespoons unsalted butter
- 3.5 oz (100g) milk chocolate (at least 33% cocoa)
- 1.8 oz (50g) semisweet chocolate (at least 50% cocoa)
Instructions:
- Prepare the Crepe Batter:
- In a mixing bowl, whisk together the egg, sugar, and salt until the mixture becomes fluffy.
- Gradually add the flour in thirds, alternating with the milk, mixing well after each addition to achieve a smooth batter.
- Stir in the cocoa powder and ground coffee (if using). Let the batter rest for at least 30 minutes.
- Cook the Crepes:
- Heat a non-stick skillet over medium-high heat and lightly grease with sunflower oil.
- Pour approximately ½ cup of batter into the skillet, swirling to cover the bottom evenly.
- Cook for 30-60 seconds until the edges turn golden brown, then flip and cook for another 30-60 seconds.
- Transfer the cooked crepes to a plate and repeat with the remaining batter, greasing the skillet as needed.
- Assemble the Crepes:
- Spread about 1 tablespoon of Nutella over each crepe while it’s still warm.
- Fold in the sides and roll them up. Arrange the filled crepes on a serving dish.
- Prepare the Warm Fudge Sauce:
- In a heatproof bowl, combine the butter, milk chocolate, and semisweet chocolate.
- Place the bowl over a saucepan of simmering water (double boiler method), stirring until the chocolates and butter melt and the mixture becomes smooth.
