  • 2 tablespoons unsalted butter
  • 3.5 oz (100g) milk chocolate (at least 33% cocoa)
  • 1.8 oz (50g) semisweet chocolate (at least 50% cocoa)

Instructions:

  1. Prepare the Crepe Batter:
    • In a mixing bowl, whisk together the egg, sugar, and salt until the mixture becomes fluffy.
    • Gradually add the flour in thirds, alternating with the milk, mixing well after each addition to achieve a smooth batter.
    • Stir in the cocoa powder and ground coffee (if using). Let the batter rest for at least 30 minutes.
  2. Cook the Crepes:
    • Heat a non-stick skillet over medium-high heat and lightly grease with sunflower oil.
    • Pour approximately ½ cup of batter into the skillet, swirling to cover the bottom evenly.
    • Cook for 30-60 seconds until the edges turn golden brown, then flip and cook for another 30-60 seconds.
